I have 2 of these 7 " knives - one at home and one at our cabin.I love them.I keep them sharp and they never let me down.Great for chopping, slicing, dicing.I couldn't be without this knife.Much better than a much more expensive set I have.

Translated as "three good things," Santoku knives excel at the three styles of cutting most employed in the kitchen, slicing, dicing, and mincing with equal capability.
KitchenAid forged the Santoku knife's blade from high carbon stainless steel to resist rust and stains. The flat edge design executes finer cutting tasks, like mincing garlic, with particular aptitude. A series of small depressions run parallel to the blade's edge, generating air pockets between the blade and the food it is slicing. These air pockets prevent thinly sliced food from sticking to the blade. For greater balance and strength, the Santoku knife benefits from a full tang, sealed in the shatter-resistant DuPont Delrin handle. The acetal resin handle features an ergonomically friendly contoured grip and a brushed stainless-steel end cap. The tops of the blade and the handle run in-line to create extra space for fingers.
